EXTRA VIRGIN OLIVE OIL
The olives we grow are harvested at the beginning of veraison when they express their full potential.
The cultivars are the classic ones of the Valnerina: Leccino, Moraiolo, Frantoio, Rajo.
Within 24 hours of harvesting, the olives are processed with cold extraction that guarantees a lower acidity.
The resulting oil has a clear green colour with golden-yellow reflections. Generally suitable for all structured dishes but also for the classic bruschetta and soups and in general to season traditional Umbrian dishes.
We have rediscovered some ancient fruit plants, such as apples and figs, we also collect blackberries, sour cherries, walnuts, hazelnuts.
Our fruit plants do not undergo any kind of treatment except primary processing, pruning and tillage. The fruit is picked from the plant at full maturity, completely by hand, and immediately processed.
The availability of the various tastes depends on the season and the annual production.
I Terzieri Country House and I Terzieri Cottages are located in a lovely place in Umbria: the Valnerina, the valley of the river Nera.
I Terzieri Country House is located in the Nera River Park, few miles from the Marmore Falls, the Lake of Piediluco and the Longobard town of Spoleto.
